Ingredients:
Baby fennel: 250 gm
Medium-sized apple: 1
Small onions: 2
Cherry tomatoes: 70 gm
Toasted pine nuts: 1-2 tbsp
Extra virgin olive oil: 5 tbsp
Balsamic vinegar: 2-3 tbsp
Lemon: 1
A bunch of coriander
A small bunch of rocket, watercress or baby lettuce
Crushed peppercorn: to taste
Salt: to taste
Preparation Method
This recipe requires very short preparation time, and therefore, you can prepare it and serve immediately. Also, remember that eating fresh salad is better than preparing it hours before and having later. To start with, take a chef’s knife and slice all the vegetables in small cubes or as per your preference. Then, take a medium-sized pan and blanch the baby fennel in boiling water. Crumbled cottage cheese (paneer): 2 tbsp
Alfalfa sprouts (You can use moong dal sprouts): 1 tbsp
Dates (pulp extracted), boiled: 2
Jaggery, grated: 2 tsp
Tamarind pulp: 2 tsp
