Mediterranean Green Salad

This healthy Mediterranean green salad has the desired crunch and flavor. Add the salad to your green vegetable diet or serve it at your BBQ parties. 

Ingredients

1 1/2 cup sweet peas

1 cup chopped cherry tomatoes

2 spring onions (chopped)

1 butter lettuce

3/4 cup chopped green peppers

1/2 cup broccoli

Some baby spinach leaves

4 Tbsp. olive oil

3 Tbsp. pure honey

2 Tbsp. chopped mint leaves

Lemon juice

Method

Prepare the dressing for the Mediterranean green salad by combing the honey, oil, mint leaves, and lemon juices. Arrange the chopped vegetables in a bowl and pour the dressings over them. Serve the green salad immediately.

Thai Green Salad

This Thai-inspired salad featuring tons of green vegetables tossed with a slightly creamy dressing makes for a great addition to a green vegetable diet. Top the salad with chopped nuts such as cashews or peanuts for some crunch. 

Ingredients

2 Tbsp. lime juice

1 sliced green onion

3/4 cup coconut milk

2 cup cucumber ribbons

1 minced garlic 

3 cups chopped green leaf lettuce

2 Tbsp. soy sauce

1/4 cup chopped cilantro 

1 Tsp. brown sugar

3/4 Tsp. crushed red pepper flakes

1/2 cup chopped fresh basil

Chopped peanuts and cashews

Method

Make the Thai salad dressing by mixing lime juice, garlic, sugar, sauce, and milk together. Sprinkle the red pepper flakes and combine well. Take cilantro along with lettuce and cucumber ribbons in a bowl. Pour the Thai dressing over the cucumber mixture. Top with basil, onions, and chopped nuts. 

Green Vegetable Bake

This casserole has loads of green vegetables including zucchini, bell peppers, spinach, and broccoli. You can add potatoes, onions, and rosemary for extra deliciousness. 

Ingredients

2 cups sliced mixed bell peppers

1 cup sliced zucchini

3/4 cup broccoli 

2 Tbsp. Worcestershire sauce

1 cup sliced onions

3/4 cup sliced potatoes 

2 Tbsp. cornflour

1 cup chopped spinach

3 chopped rosemary leaves 

2 cup three-cheese blend

3 Tbsp. Dijon mustard

Butter

Salt and black pepper

Chopped Parsley

Method

Preheat your oven to about 180 degrees and grease a baking dish with butter. Combine all the veggies except for potatoes and onion with cornflour, mustard, rosemary, and sauce. Season potatoes with salt and some freshly ground pepper and arrange them on the baking dish. Top them with half of the veggie mixture, onions, and some cheese. Again spread some veggie mixture and cheese and finally top with parsley. Bake the casserole for 37-40 minutes. Serve hot.

Cheesy Spinach Crepe

This delicious crepe has a cheesy spinach filling. You can add bacon and bake it in the oven before adding it to the filling.

Ingredients

1 cup cooked spinach

3/4 cup minced onion

1 cup cottage cheese 

¾ cup Mozzarella cheese

Salt and pepper

Crepes

Method

Take cooked spinach and mix it with cottage cheese and onion. Season this mixture. Heat a pan and place the crepe on it. Top the crepe with spinach mixture and some Mozzarella cheese. Fold the crepe and cook it until the cheese melts. 

Green Smoothie

This incredibly healthy smoothie is prepared with just 4 ingredients. You can add top it with some mixed nuts to make it extra healthy. 

Ingredients

3/4 cup frozen spinach

1 cup milk 

3/4 cup fruit of choice

1 banana

Method

Blend all the smoothie ingredients until smooth. Pour the green smoothie in a glass, top with choicest nuts, and enjoy.
