1.Vegan Pumpkin and Sweet Potato Soup Recipe
- 1 tbsp margarine
- A diced onion
- 1 cup white wine
- 2 tbsp chopped fresh thyme
- 2 stalks celery, diced
- 3 sweet potatoes, diced
- 1 1/2 pounds pumpkin, peeled and chopped
- 7 cups vegetable broth
How to make- Heat the onions and celery in margarine in a large soup pot for 2 minutes. Reduce the heat and add wine. Simmer for five minutes. Add the rest of the ingredients. Bring to simmer. Cook for at least 30 minutes. Make sure that pumpkin and sweet potatoes have become soft. Puree in a blender and mash to desired consistency.
2. Healthy Vegetables Soup Recipe: Masoor Dal and Paneer Soup
- 1/4 cup split red lentil (Masoor Dal), washed and drained
- 1/4 cup low fat Paneer cubes (cottage cheese)
- 1/2 cup sliced onion
- 1/4 tbsp chili powder
- 1/2 tbsp crushed garlic
- 1 tbsp oil
- 3/4 cup chopped tomatoes
- 2 tbsp lemon juice
How to make – Heat oil. Add onions and fry in medium heat for 1-2 mins. Include garlic and chili powder and fry in medium heat again. Then, add the dal, tomatoes, and 2 1/2 cup water. Mix and pressure cook for 3 whistles. Cool slightly and blend to make puree. Take the puree in a pan, add salt, and mix well. Bring it to a boil. Simmer for about 2 minutes. Add the lemon juice and paneer and serve.
3. Carrot Soup or Gajjar Soup Recipe
- 2 cups chopped carrots
- 1/2 cup chopped onions
- 3/4 cup low-fat milk
- 1 tbsp yellow moong dal (split yellow gram), washed and drained
How to Make – Combine the dal, onions, carrots, and 1/4 cup of water in a pressure cooker. Mix well and pressure cook for 2 whistles. Let the steam escape before opening the lid and keep it aside to become cool. Once cooled, take it to a blender to puree. Take the puree in a deep non-stick pan. Add the milk, salt, and pepper, 1/2 cup of water. Mix well and cook in medium heat. Stir time to time.
4. Healthy Vegetables Soup Recipe: Chinese Clear Veg Soup
- 1 carrot, thinly sliced
- 3/4 cup cabbage
- 3 lettuce leaves
- 2 tbsp oil
- pinch of baking powder
- 3 spring onions with greens
- 2 tbsp soy sauce
- 3 sticks celery
- 50 gms sliced cauliflower
- a pinch of citric acid
How to Make – Tear cabbage, lettuce leaves, and chop the spring onion with leaves. Cut the celery into about 12 mm pieces. Heat oil and add the vegetables, baking powder, and citric acid. Cook on high flame for 3-4 minutes. Add 5 cups of boiling water, soy sauce, and salt. Boil for 3-4 minutes. Serve hot.
5. Spinach Paneer and Dal Soup
- 2 cups finely chopped spinach
- 3/4 cup low-fat cottage cheese cubes
- 1/2 cup yellow moong dal, washed and drained
- 3/4 cup finely chopped onions
- 2 tbsp low-fat butter and salt
How to Make – Put dal, spinach, onions, and 6 cups of water together in a deep non-stick pan. Mix well and cook on a medium flame for about 4-5 minutes. Cook until the dal becomes soft. Once cooled, blend the spinach mixture to a smooth puree. Take the puree in a deep non-stick pan. Add the butter, salt, pepper, and paneer. After mixing, bring this to a boil and serve hot.
