Vegetarian Recipes With An Indian Twist

Dal Tadka

For this recipe, pressure cook the dal with salt and turmeric for a 4-5 whistle and keep it aside. Now for the tadka, heat a pan add ghee, add cumin seeds let it crackle. Add chopped garlic and chili, sauté for a while. Now add finely chopped onions and cook until it is soft. Further, add sliced tomatoes and cook until the tomatoes are soft. Add cumin, coriander and red chili powder to the tomatoes. Cook for 5-6 minutes stirring in between. Add salt and a pinch of garam masala, cook for a minute and add the dal to the pan. Let the dal simmer for a while add amchur powder and freshly chopped coriander leaves. Serve hot.

Mattar Paneer

Firstly blanch some tomatoes and let it cool. It is one of the most popular Indian recipes Now take a pan, add oil and bay leaves to it. Add onion paste and sauté for few minutes. Now add ginger and garlic paste to the pan and cook for a few minutes. Purée the blanch tomatoes and put it in the pan along with some green peas. Add coriander, cumin, Kashmiri Mirch powder. Cook until the masala leaves oil. Add water and adjust the consistency accordingly. Add garam masala and paneer cubes to the gravy. Cook for 3-4 minutes and garnish with coriander leaves. Serve with hot roti.

Take gram flour in a bowl and semolina to it and add water to make a pancake-like a batter. Now make a paste of green chili and cumin seeds and add to the chilla batter. Add salt and a pinch of baking soda to it, keep aside for few minutes. Heat a pan and make small pancake-like rounds with the batter. Put oil on the edges of the chilla and cook on both sides until crisp. Serve with coriander chutney.

Veg Pulav

Take basmati rice, wash and soak it in water for a few minutes. Meanwhile, boil water in a vessel and add bay leaves, clove, cinnamon, cardamom and ghee to the water. When the water starts boiling add the soaked rice and salt. Cook the rice and then drain the water and let it cool. Now heat another pan add oil and ghee. Add chopped onions, carrots and peas, cook until the veggies are tender. Add the cooked rice and season with salt and garam masala. Mix properly and in the end, add a teaspoon of rose water and fried cashews. Serve hot.
