Root vegetables are made from underground runners, which have a long underground stem and a long root system. The stems of these plants are usually harvested just before the plant flowers but can be picked when the flower begins to bloom. Carrots and turnips have a bulbous top, with the endosperm at the bottom. On the other side of the bulbous base of the vegetable are the ovaries, which are responsible for making new plants. The ovary is surrounded by a thick, tapered lateral band of skin. The flesh of cabbage is a dense mass of nerves, hormones and other substances that are important for the production of certain chemicals in the body.

For those who don’t eat every day, or who have poor eyesight, there are two other excellent vegetables to add to your diet, along with root vegetables. Flax seeds are full of nutrients, including fibre, which helps regulate bowel movement; and chlorella is a good source of vitamin K. Chlorella can be added to a salad, mixed with spinach, yellow or green leafy greens, or used in place of spinach in a pita sandwich. Chlorella is also a good choice to cook with, as it adds a fresh taste to any dishes you make with spinach.

If you really want to enjoy the benefits of root vegetables, add some sweet potatoes as well! All potatoes contain potassium and, therefore, all sweet potatoes are good for your health. But, surprisingly, sweet potatoes are one of the least beneficial vegetables to eat on a regular basis. Research has suggested that eating too many sweet potatoes per day can cause health problems, such as obesity, heart disease and diabetes. While the health benefits of sweet potatoes are somewhat negated when eaten in excess, the more you eat the less effect they have on your health.

Has Vitamin C

Vitamin C is another fruit that provides health benefits similar to those of root vegetables. In addition to helping to prevent illness and heal wounds, research has found that vitamin c improves cardiovascular health. When taken in supplement form, vitamin c supplements can be used to boost the immune system. Sweet potatoes, turnips, carrots and leafy greens are all excellent choices for vitamin c. They are also excellent choices for soups. While most soups only contain a small amount of vitamin c, increasing the number of leafy greens or other vegetables eaten in a soup can help provide a healthy amount of vitamin c.

Includes Other Vitamins

Carrots, celery and other vegetables have a bit of a bitter taste to them. However, many people are willing to tolerate this bitter taste in exchange for the added benefits of vitamins A, D and K. Adding carrots, celery and other vegetables to a pot of soup can help make the soup more creamy, leaving less time for that bitter taste. Likewise, turnips and other leafy greens can be added to casseroles or stews to make them more colourful and more nutritious. In addition to being excellent for making food taste better, the vitamins and minerals that vitamins C, E and K provide make them excellent for supporting your whole body’s immune system.
