Chola or chickpeas is a very versatile dish and cooked in many different ways. Following is the easy and simple recipe to make it. Firstly, soak the chola overnight in water. In the morning pressure cook it for 5-6 whistle with a little salt. Keep it aside. Now heat a pan adding oil. Add cumin seeds and asafoetida, wait till the cumin crackles and then add chopped onions and sauté till the onions are translucent. Now add the chola but don’t add water. Cook for few more minutes and then add Kashmiri mirch powder, chaat masala, and red chili powder. Mix well and then add grated ginger and chopped green chili and coriander and add salt as per your taste. Turn off the heat and serve with hot Bhaturas.
Classic Indian dish which is cooked in each house. For this cut cauliflower into florets, an boil it for few minutes with a little salt. Drain it when cooked and keep aside. Now heat a pan add mustard oil and then add diced potatoes. Fry till it turns golden and then take it out of the pan. Add boiled cauliflower to the pan and fry till golden brown. Take it out and then add bay leaves, panch foran, and asafoetida. Add a paste of onions, green chili, ginger, and garlic. Sauté the paste for a few minutes. Put tomato purée in the onion mix and cook of good 8-10 minutes stirring in between. Add boiled peas and add turmeric, cumin and coriander powder, and garam masala too. Cook for few more minutes until oil separates. Add water and adjust consistency. Also, add the fried potatoes and cauliflower. Cook for 5 minutes and garnish with chopped coriander.
Mushroom Do Pyaaza :
This dish is spicy and full of authentic flavors. Firstly boil the mushrooms cutting it into half, with turmeric and salt. Let it boil for a good 10 minutes. Now drain the water from mushrooms and heat a pan. Add oil and add bay leaves, cumin seeds, cinnamon stick, cardamom seeds, clove, and dry red chili. Let the masala crackle and then add sliced onions, cook until translucent. Now add minced garlic and ginger. Sauté for a minute and add a paste made of onion, green chili, ginger, and garlic. Add all dry spices that are turmeric, cumin, and coriander powder. Stir and add the boiled mushrooms, add little water and let the mixture cook for 5 minutes. Add garam masala and cook until oil separates. Add salt and garnish with coriander leaves and eat with hot paratha.
This recipe is for all the potatoes lover. Simply heat a pan, add a dash of oil and add bay leaves and panch fodan. Let it crackle and then add diced boiled potatoes and sauté for a while. Add ginger and green chili paste and chopped tomatoes to the pan. Cook until the tomatoes are soft, then add turmeric and red chili powder. Add water and let it simmer for good 10 minutes. Add salt and see the curry is not too runny. Transfer to a bowl and garnish with coriander leaves. Enjoy with puris.
